Crunchy Ramen Noodle Salad

Hey friends!  I found this recipe on pinterest and decided to put a twist on it and make it my own.  Super easy and quick to make.

2 pkg. uncooked ramen noodles
1/2 cup slivered almonds
1/2 cup chopped green onions
1 bag cole slaw
2 ramen noodle chicken seasoning packets
3/4 cup canola oil
1/2 cup white vinegar
1/3 cup sugar and another 1/2 cup sugar

Combine uncooked ramen noodles, green onions and cole slaw in a bowl and mix.  In a separate bowl mix canola oil, white vinegar, chicken seasoning packets and 1/3 cup sugar.  Whisk together until the sugar has completely dissolved.  You can throw your almonds into the salad but I like mine caramelized.  Place 1/2 cup sugar and almonds in a fry pan and turn on low.  Cook until the sugar melts and glazes over the almonds.  Toss almonds and dressing in the salad and mix well.  Let sit for about 20-30 min to let all the flavors soak in and serve.

Dorrito Casserole

Looking for a super quick and easy dinner to whip up?  This is one of my favorites!  Prep time is less than 2 min and only takes 20 min to cook.  Hope you all enjoy!

Ingredients:
1 Bag Nacho Cheese Dorritos
1 Can Chili
1 Can Mild Sauce
1/2 cup Shredded Cheese

Directions:
Mix can of chili and mild sauce in a bowl.  Crush up 1/2 of the bag of dorritos and mix that in with the chili and mild sauce.  Fill into a tin pan.  Heat oven to 400 degrees and cook 15-20 min.  Sprinkle cheese on top and add a layer of Dorritos on top.  Place back in oven for few minutes to let the cheese melt.

Linton Family Secret Chili Recipe

Still trying to stay true to my promise to post a lot more this year.  Here is my favorite Chili Recipe

1 tsp cumin
4 tsp chili powder
1 tsp oregano
1 1/2 ib ground beef (cooked)
1 onion - diced fine
1 garlic clove or powder
1 - 16 oz can diced tomatoes
1 - 27 oz kidney beans (rinsed)
1 - 16 oz pork and beans
1 - 8 oz tomato sauce
1 1/2 tsp salt
1/4 tsp pepper

Mix all together and put in the crock pot on medium.  Simmer for 2-3 hours.

Christmas Potpourri

Hey Friends!  Sorry for my absence in 2014.  Hoping to be posting a lot more this year.  Thought I would share with you a little Christmas Potpourri to get your New Years started.

Ingredients:
1/2 cup fresh cranberries
1 orange (sliced)
4 cinnamon sticks
1 tablespoon cloves
1/8 tsp nutmeg

Instructions:
To fill your home with a delicious holiday scent: bring 3 cups of water plus jar contents to a simmer over low heat, uncovered, in a small pot.  Check the water periodically and add more if it starts to get low.

I have had this simmering all morning and my house smells amazing!  Also great for neighborhood gifts, just put the ingredients in a mason jar.

Simple Quick Recipes

After working a full day at work the last thing I want to do when I get home is spend a ton of time cooking dinner.  Here are two simple recipes that I made this week.

Spicy Chili Chicken Tacos


This takes about ten minutes to prepare.  In the morning place in a crock pot 3 oz tomato paste, 8 oz tomato sauce, 2 cans of corn, 2 cans of kidney beans, 2 cans of black beans,  (Do not drain the juice) and 1 packet southwest marinade.  Mix ingredients all together.  Add 4 frozen chicken breasts and cover it with sauce.  Cook on low for 8 hours.  Once done shred the chicken and place in soft tacos.  These are really good with cheese and dipped in Ranch dressing.  

Wiener Boats


Using 5 hot dogs cut them in the center but not all the way through.  Place on a cookie sheet.  Cook in the oven on 375 for 8-10 minutes.  Using 1 cup potato pearls add in 2 cups hot water slowly stirring in.  When hot dogs are done place potatoes on top.  Add a half slice craft singles cheese on top.  Place back in oven for 1-2 minutes or until cheese is melted.

Roast Recipe

Alright guys I made my very first roast today.  I was pretty proud of the way it turned out.    It was suppose to be just Tyler and I for dinner but we ended up having seven people and there were still leftovers.  Super easy and simple to make.  Hope you enjoy!


I used a rump roast that I bought from Walmart they night before.  Stick the roast inside the crock pot.  Clean five to seven potatoes.  Slice into fourths.  Put inside crock pot around the roast.  Using a small bag of carrots add half the back into the crock pot.  In a separate bowl add one envelope Lipton Beef Onion Soup.  Add 3 cups water and stir together.  Pour over top in the crock pot.  Add onions and garlic to your desire for extra flavor.  Set temperature to low.  I left mine in the crock pot for 12 hours but it should be good to go after 9 hours.
